Eggroll in a Bowl

These were SO easy, SO quick, and SO good. 

Eggrolls without the fried greasy pile of calories? YES PLEASE! My friend Cami shared this recipe with me, and I was hesitant because I actually dislike “real” egg rolls {GASP!}. BUT I was out of dinner ideas and was on a roll of trying new things, so I figured YOLO right? I modified it a bit to make it even healthier for you!

Ingredients:

  • 1lb sausage (I used lean & organic from whole foods)
  • 1 bag of coleslaw mix
  • 1tsp ground ginger
  • 4 cloves of ground garlic
  • 1/4c braags liquid aminos (wonderful soy sauce alternative)
  • sliced green onion (I skipped this)

Directions:

  • saute sausage until cooked thoroughly
  • combine ginger, garlic and liquid aminos and mix well
  • add bag of coleslaw mix to the pan with sausage (turn to medium heat) and cook approx 4 mins until coleslaw is starting to soften yet still crunchy
  • add in sauce & mix well
  • top with onion and enjoy!
